Cold Pea~Cucumber~Mint soup recipe from our kitchen to yours!

This is a powerful inquiry that we invite you to ask yourself every morning, as a meditation opening.

With all that is going on in the world today - protests, riots, the looming pandemic and economic downturn - our emotions can run the gamut. However, the more aware we are of our feelings, the easier it will be to organize our day in a way that serves us. Maybe you are feeling agitated and need some exercise to blow off some steam, or perhaps you you might be feeling a bit of despair and could use an energizing pranayama? No matter what you are feeling, simply recognize, name and accept your present emotions with no judgement. Meet yourself with compassion and equanimity.

The universe has given you time and space to take care of yourself! The time is now...

Meanwhile, we share with you this simple and delicious, summertime recipe that can uplift you from the inside out! :)

Cold Pea, Cucumber, Mint Soup (4 portions)

​​​​Ingredients:

400g frozen peas, defrosted, plus a handful extra to garnish

1 cucumber, peeled, deseeded and chopped

2,5 cups fresh vegetable stock, chilled

1/2 cup spinach

4 tablespoon of chilled cream of coconut

1⁄2 cup mint leaves, plus extra to serve

2 tablespoon fresh dill, chopped, plus extra to serve

1/2 teaspoon salt

Cream of coconut to drizzle

Roasted cashews or pumpkin seeds for serving

Put peas and cucumber into a pan with a splash of water and cook for 1 minute, then tip into a vitamix with the stock and spinach and blend until really smooth.

Add the cream, mint, dill and salt and blend again. Pour into a jug, along with a handful of ice, and chill for at least 1 hour to allow the flavours to develop and the ice to melt.

Pour into bowls, drizzle with a little cream of coconut and garnish with a few peas, and roasted cashews.
