Creamy Tomato Soup recipe from our kitchen to yours!

One of the best ways to nurture your body and soul is to eat good food, and we both know that a great retreat needs delicious food! So we will be sharing with you some of Ahki’s most popular recipes, for you to enjoy once again at home.

Creamy Tomato Soup

(4 portions


1 tablespoon coconut oil

1 onion, chopped

1 clove garlic, finely chopped

1/2 teaspoon dried oregano

1 teaspoon dried basil

2 cans whole peeled tomatoes

2 tablespoons cane sugar

2 large potatoes

3 cups vegetable stock

1/2-1 teaspoon salt

Fresh basil for serving

Drizzled olive oil for serving

Roasted pumpkin seeds for serving

Add the chopped onion and minced garlic to a pot with the coconut oil and sauté. Add in the oregano and basil and sauté until the onions are softened.

Add the whole peeled tomatoes, peeled and chopped potatoes, sugar and 3 cups of vegetable stock.

Bring to boil and then turn down to simmer until all the ingredients are soft and cooked (around 30 minutes).

Transfer to a vitamix and blend it up. Return to the pot, add salt and reheat.

Serve warm with drizzled olive oil, a sprinkle of roasted pumpkin seeds and fresh basil leaves.
